Wine goes great with everything! Here's a great method for searing and cooking any steak
One-inch thick bone-in rib-eye steak
Olive oil and fresh ground pepper; sea salt
Bring the steak up to room temperature - blot dry. Rub steak with oil, salt and pepper - let rest for an hour
Put a cast-iron skillet into a 500-degree oven and bring the skillet up to temperature.
When ready to cook the steaks take the hot skillet out, put it on a very hot burner and sear one side for :30 seconds, flip over for another :30 seconds.
Put the skillet and steak into the hot oven for 2 minutes. Flip for 2 more minutes for perfect medium-rare steaks. Take the steaks out of the oven and let rest for 5 minutes - serve immediately.
