Fit Tips: Spinach Chicken Pesto

    1 lb Cooked Chicken
    1 Bell Pepper, Diced
    3 Cloves Garlic, Minced
    Fresh Basil, Large Handful
    2-3 Cloves Garlic
    ¼ Cup Grated Parmesan
    3 Tbsp Extra Virgin Olive Oil
    1 Roma Tomato, Diced
    Spinach, Large Handful
    Cilantro, Small Handful
    1 Cup Skim Milk Mozzarella Cheese

Step 1

A drizzle of olive oil into a pan over medium heat.
Step 2

Add chicken, bell pepper, garlic and salt, and let it heat up.
Step 3

In a food processor, add fresh basil, garlic, parmesan, salt and pepper, and olive oil.
Step 4

Add 2 tablespoons of the pesto to the pan and save the rest for later - to add to anything you want to make taste awesomely delicious!
Step 5

Into the pan, add tomato, spinach, and cilantro, and work it all together for about 2 minutes.
Step 6

Finally, add the cheese.
