3 lbs Ground Chicken 1 Medium White Onion, Diced 1 Red and 1 Green Pepper, Diced 8 oz. Pkg of Mushrooms 10 Cloves of Garlic, Minced 1 Cup White Wine 28 oz. Can of Diced Tomatoes and 16 oz. Can of Diced Tomatoes 2 Tbsp Italian Seasoning 1 Tsp paprika 1 Tsp Crushed Red Pepper 1 Tsp Chipotle Powder 1 Tsp Chili Powder 1 Tsp Onion Powder 1 Tsp Garlic Powder 1 Tsp Salt 1 Tsp Pepper 16 oz. Can of Corn, Drained 16 oz. Can of Black Beans, Drained 1 Medium Red Onion, Diced
Step 1 In a pot over medium high heat, add a small drizzle of olive oil.
Step 2 Add ground chicken.
Step 3 Let it brown while occasionally moving it around with a wooden spatula.
Step 4 Add diced onions, bell peppers, mushrooms and garlic, and white wine.
Step 5 Let it cook down.
Step 6 Add diced tomatoes and chicken stock.
Step 7 Reduce the heat to low.
Step 8 In a bowl, mix together: Italian seasonings, paprika, crushed red pepper, chipotle powder, chili powder, onion powder, garlic powder, salt and pepper.
Step 9 Add seasoning mix to pot.
Step 10 Add several dashes of your favorite hot sauce.
Step 11 Let everything cook down and thicken.
Step 12 Add drained corn, drained black beans and diced red onions.
Step 13 Stir together.
Step 14 Serve on a plate or in a bowl and add these toppings: - Fresh tomatoes - Low fat cheese - Light drizzle of low fat sour cream - Fresh cilantro - A squeeze of lime - Tortilla strips for a little crunch.
