Lamb Sliders

Serving size: 6 sandwiches

  • 5 #s Ground lamb
  • 6 slider buns
  • 1 cup spring mix
  • 2 tomatoes
  • 1 Red onion
  • Salt and pepper to taste
  • Tzatziki sauce (see recipe)

Form ground lamb into 6 4oz patties. Lightly oil them and grill on low to medium Heat until they reach the internal temperature of 160 degrees. To build the slider add the lettuce, tomato, and red onion on the top bun. On the bottom bun put the lamb burger and tzatziki sauce right on top. Toothpick and serve.

Tzatziki sauce

Serves 4-6 people

 

  • 3/4 English cucumber, partially peeled and diced
  • 1 tsp kosher salt, divided
  • 4 to 5 garlic cloves, peeled, minced
  • 1 tsp lemon juice
  • 1 tbsp Extra Virgin Olive Oil
  • 2 cups Greek yogurt
  • 1 cup sour cream
  • 1 tbsp of minced dill
  • 1/4 tsp ground white pepper

Peel cucumber and dice it small. Mince the garlic and dill and mix all ingredients together and chill for 1 hour.

Grilled Mediterranean salad

  • Olive oil
  • ½ cup balsamic vinegar
  • 1tbsp of chopped garlic
  • 2 red bell peppers cut into 4
  • 1 zucchini, sliced on the diagonal
  • 1 red onion thick sliced
  • 1 cup chickpeas
  • 1-pint grape tomatoes
  • 1 cup of pine nuts
  • ½ cup chopped olives
  • ½ cup feta cheese
  • Salt and pepper to taste
  • 2 tbsp balsamic glaze
  • 3 cups mixed greens

Lightly grill zucchini, red onion, and bell peppers. to build the salad put the greens on the bottom of a bowl or platter. Add grilled vegetables and top it with chickpeas, grape tomatoes, pine nuts, chopped olives and fetta cheese. Drizzle olive oil and balsamic glaze. Salt and pepper to taste. Serve room temperature.
