Pork Schnitzel Sandwiches

Serving size: 6 Schnitzel
- 1.5 lbs boneless pork chops trimmed and sliced into 4oz thick cutlets
- 1/3 cup all-purpose flour
- 1 Tbsp garlic salt or sub with equal parts salt and garlic powder
- 1/2 tsp paprika
- 1/2 tsp black pepper freshly ground
- 3 large eggs
- 2 cups panko breadcrumbs
- Olive oil canola oil or any high heat cooking oil to sauté
Cut pork into 4 oz slices. Put plastic wrap over pork and pound with mallet until paper thin. Dredge pork into flour, egg and then breadcrumbs. Pre-heat cast iron skillet on medium heat. When oil reaches 325 degrees, place pork cutlets into pan and brown on each side and cook until internal temperature reaches 155. Place on cookie sheet with a rack to drain grease.
