Underdog BBQ to continue Growth at New Location
It’s been a little over a year since Ashley Messenger bought Underdog BBQ for $100 from Undercover Billionaire, Glenn Stearns.
"I asked him, ‘Are you still going to sell it?’ and he said yeah… He said ‘I want to sell it to you,’" she remembered.
Now, the subject of the Discovery Channel show is getting ready for a new chapter, moving from their first home base on West Lake Rd to a new location. "It's getting stuffy here, so we found another location. We're working hard to get into that new location. It has a lot of work, but we're underdogs we're used to that,” Messenger laughed.
Since it's opening, the restaurant has continued to grow. It launched a catering service and its Protectors of the Pit food truck. The growth hasn't come without its hiccups. "With COVID, with staff shortages, with inflation-- even the gas prices have affected us because we have the food truck," she said.
Those challenges brought with them a silver lining, forcing them to learn how to adapt. After all, overcoming challenges are what being an Underdog is all about.
The chapter for the West Lake Rd location is closing, but it’s far from the end for Underdog.
"I fell in love with this industry, and I love cooking, and I love bringing people together. That's my driving force,” said Messenger.
The new location is still under wraps, but it is nearby the original. Messenger says the move will be happening soon, and they’re hoping for a seamless transition.
