As the warmer seasons approach, local food trucks are anxious to open their service windows, fire up the grills and satisfy hungry customers.

But with the rising cost of goods and commodities, these small businesses are fighting costly setbacks.

A Waffle Miracle, an Erie food truck owned by Jessica and Alexandra Peirson, is one local example. 

"Being on the road has its challenges," Jessica said. "The mobile part of it, that definitely adds a lot of extra expenses."

"We definitely have to worry about our gas prices and our generator costs, just getting out to somewhere and showing up," Alexandra said.

This means that customers may have to pay a little extra for their food.

"Unfortunately for us to stay afloat and provide the food, we have to make them pay for it just like we have to pay for it," Jessica said. "It should be reasonable."

But that's not stopping these young entrepreneurs from doing what they love.

"I definitely love to be face-to-face with a customer," Alexandra said. "[To] see the biggest smile on their face[s], the wows and oohs and ahhs that come out when they're tasting our products."
