Brianna Lyle from Zadie's Gourmet shares her Mushroom Sausage Rigatoni recipe.
Ingredients:
- 1 lb. rigatoni
- 2 cups spinach
- 3 tbsp. extra virgin olive oil
- 1/4 cup tomato paste
- 2 cups chopped fennel
- 1 yellow onion
- 1 lb. sweet Italian sausage
- 4 garlic cloves
- 1 tbsp. fennel seeds
- 1 cup chicken broth
- 1 1/4 cup cream
- 1 1/4 cup parmesan
- 1 tbsp. red pepper flakes
Instructions:
- Cook rigatoni according to package - reserve 2 cups of pasta water
- Heat extra virgin olive oil, onion and fennel for a few minutes before adding sausage. Break down and cook sausage
- Turn heat to low and add garlic, fennel seeds, spice and tomato paste
- Add chicken broth to deglaze and then add cream. Stir in spinach
- Add pasta to sauce, using about 1 cup of pasta water to thin. Add parmesan and season with salt.
