Brianna Lyle from Zadie's Gourmet shares her Mushroom Sausage Rigatoni recipe. 

 

Ingredients: 

  1. 1 lb. rigatoni 
  2. 2 cups spinach 
  3. 3 tbsp. extra virgin olive oil 
  4. 1/4 cup tomato paste 
  5. 2 cups chopped fennel 
  6. 1 yellow onion 
  7. 1 lb. sweet Italian sausage 
  8. 4 garlic cloves 
  9. 1 tbsp. fennel seeds 
  10. 1 cup chicken broth 
  11. 1 1/4 cup cream 
  12. 1 1/4 cup parmesan 
  13. 1 tbsp. red pepper flakes 

Instructions: 

  1. Cook rigatoni according to package - reserve 2 cups of pasta water 
  2. Heat extra virgin olive oil, onion and fennel for a few minutes before adding sausage. Break down and cook sausage 
  3. Turn heat to low and add garlic, fennel seeds, spice and tomato paste 
  4. Add chicken broth to deglaze and then add cream. Stir in spinach 
  5. Add pasta to sauce, using about 1 cup of pasta water to thin. Add parmesan and season with salt.
