Lunch time is always busy for Rex Brothers Bakery on West 26th Street. As they serve customers their favorite breakfast and lunch items, they are reminded how much has changed with the cost of ingredients going up.


As Andrew Rex, the owner explained, "We opened in September of 2021 and then a case of 180 eggs was $16 and now that same case of eggs is $92." Rex believes the bird flu is to blame for the rising costs.
"I guess all the buzz is the bird flu, that they had to kill a bunch of chicks and chickens that are already adults."

But that's not the only ingredient whose cost has increased. According to Rex, "A case of cream cheese was $56 and it's $106 for the same case and butter. Butter is almost $104 for a case right now, it was $78."

With eggs being a staple in their recipes, Rex said they have had to make some changes. "Sometimes it could be ten of those cases a week, so it's a hit on your budget from what it was to what it is now", said Rex.


But it's not just the rising cost of eggs that has effected their menu prices but also the cost of butter and cream cheese, but that hasn't stopped customers from coming in. As Rex explained, "Most people understand when my prices go up, your prices go up, it's common business."


David McCracken has been a long-time customer and he said he doesn't think twice when it comes to ordering from the menu. "They are always reasonably pricing things, I don't even check the prices", said McCracken.


He knows that egg costs are effecting restaurants all around and he said he would rather support local businesses than chains. "The big-league restaurants, they incur higher costs also and this is just a good place", said McCracken.
