New Restaurant to Open in Historic Waterford Building
The Eagle Hotel in Waterford has undergone several transformations since its construction in 1826.
Most recently, it was a restaurant called Sugar N’ Spice.
Tracy Greenman worked there for almost three decades until it closed last year.
“I was devastated. I was sad, very sad,” she said. “We were all very sad. We were a family. We celebrated birthdays.”
It wasn’t her idea to open a new restaurant here. It was her husband's.
“I just walked in the door one time, and my husband said, ‘I was thinking.’ And that’s where it started,” she said.
“I knew that she was kind of chomping at the bit, and it was just one of those deals where it was like, ‘You know what? I just think we should just do it,” her husband, Scott Greenman, said.

“I never realized how much there was involved with opening a restaurant,” Scott Greenman said. “Just getting the name was a bit of a task.”
It will be similar to Sugar N’ Spice. Several beloved dishes are returning.
Some of the things they’ll serve will be “real mashed potatoes, from-scratch gravy, [and] meatloaf.” Pies and stuffed chicken breast will also still be offered.
But there will be some changes to the menu, just like there have been some changes to the building.
“Painting and cleaning,” Tracy Greenman said. “It’s just amazing - the work in the kitchen that they have done.”
They’ve been working with the Ft. LeBoeuf Historical Society to preserve the building’s history.
“You wouldn’t want to ruin some of the nicks and bumps and irregularities,” Richard Arthur of the society said. “We would never want to replace the floor, for example, which was original."
Arthur is excited for the eagle to open, just like the Greenman’s.
“I just thank God for, you know, all the blessings,” Scott Greenman said.
“I have a great crew. There’s going to be great food,” Tracy Greenman said. “It’s going to be a great atmosphere.”
They hope to open the restaurant in mid-July.
