Salsas have been around since the beginning of time, or should we say since Ancient times at least. The Mayans, Incas, and Aztecs made salsas by squashing tomatoes and chilies together to top their meats thousands of years ago. Though salsa did not get its official name until the Spanish came to and conquered Mexico in the 1500s, it has come in many varieties since then. From being molcajete style which is similar to what the Mayans, Incas and Aztecs did – smashing it in a stone bowl with a stone tool, to dicing the veggies for a fresh pico de gallo or blending the many vegetables together using modern-day technology – no matter what way you combine the ingredients, like tomatoes, chilies and spices, it is sure to be the most flavorful “sauce” you can find. If you go to Google and search the term “salsa bar near me” and you were looking for the most popular condiment in the United States, well you’d be a bit surprised that Google will try to find you a nightlife place that plays Mexican music That might be because salsa bars have become quite rare nowadays. To start, lets define a salsa bar as a self-serve condiment bar that hosts a variety of salsas, vegetables and other toppings for you to enjoy with your favorite Mexican food items. The condiments in the salsa bar provide a variety of options to add flavor, heat or also to snack on in between bites of your favorite entree.

Let’s Talk About The Many Salsas You Can Find At A Backyard Taco Salsa Bar
Pico De Gallo
Going in order of spice, we start off with one of our most popular salsas – pico de gallo. Known to be the most spice-friendly option at most Mexican restaurants, pico de gallo is the perfect topping for all Backyard Taco cuisine. In fact, we automatically add it to our pollo asada and carne asada burritos and Bueno Bowls because it’s just that good.
Did you know that pico de gallo means “rooster’s beak” in Spanish? There are many stories as to why it was given such a name.
Some say it’s because of how you finely chop the ingredients, that it looks like a rooster’s food, others say it is because of the way your hand looks, when pinching onto a chip to scoop up pico de gallo. Regardless of how it got its name, it is easily one of the most popular salsas Mexican food has to offer, especially at Backyard Taco.
Our pico de gallo is made a little differently than most. We still use the freshly chopped tomatoes, jalapenos, and cilantro, but we chose not to add in onion, as chopped onion is already a topping we put on every menu item at Backyard Taco. We wanted to make sure we didn’t overwhelm our patrons with too much onion. However, we’ve made sure that our pico de gallo is still the perfect blend of vegetables and spices, and for those who aren’t the biggest onion fans, they can enjoy our pico de gallo and as much as they want at our complimentary salsa bar.
Tatenada Salsa
Next up on the spice list, mild to some, more medium to others, is our signature tatemada salsa. When you come into our restaurants, you may see our staff grilling tomatoes on our mesquite grills right behind the cash register. One of the main reasons for this is our tatemada salsa. Tatemada means “charred” in Spanish, and that is exactly what we’re doing, charring up fresh tomatoes to bring you some of the best salsa with the perfect amount of heat in Phoenix.
These charred tomatoes get blended together with roasted serranos and fresh garlic to bring you one of the most popular salsas at our salsa bar. Whether you’re topping your grilled gordita or cheesy vampiro to spice it up just a bit or using it as the perfect chip dip, our tatemada will be sure to please anyone who loves just a little kick of heat.
Birria Salsa
There are some that like it hot, and then there are some who like it REALLY HOT. Those who like it really hot absolutely love our birria salsa. Not to be confused with our famously slow-roasted and delicious birria meat (shredded beef) or the consume broth that you can use to dip it in – birria salsa is the hottest salsa offered at the Backyard Taco salsa bar.
Though birria salsa is not to be confused with birria meat, it was made to complement the rich flavors of the meat itself.
With a similar color to the consume as well, it is easy to see where this rich, red salsa got its name from. This salsa combines roasted arbol and jalapeno chilies with garlic to bring you that bright color and wonderful flavor. But make no mistake, this is a salsa that should come with a proceed with caution sign – for most, it is not going to be your chip dipping salsa, but instead something you drop atop your tacos or mix into your bowl.
Birria salsa will most definitely be the one to wake up your senses and especially your heat receptors, a little of it goes a long way, and you may need an ice cream cone or an ice cold horchata to wash it down with after.
Jalapeno Salsa
When it comes to spice, our jalapeno salsa may be a bit too much for some, but be sure there is still a great amount of flavor that comes with the heat. Our jalapeno salsa is actually a mixture of both serrano and jalapeno chilies, boiled together with spices and a few other secret ingredients before being blended and strained. Next time you have some, see if you notice a bit of tomato flavor in there, because guess what, there is indeed tomato inside of our jalapeno salsa, including a few other secret ingredients that we just must keep to ourselves.
This may be the only green salsa or salsa verde in Spanish that you might find in our Backyard Taco restaurants, but believe it is a standout at our salsa bar and loved by many. Though we always recommend to use it sparingly, as a little goes a long way, it is a great topping to our Papa Locas and Quesadillas to add just the perfect kick in there for all our spice lovers – and be sure to wash down this Mexican classic with one of our Mexican sodas like the Mexican coke or any of the fruity Fantas.
Our Famous Guacamole Salsa
It is definitely not the spiciest at our famous self-serve salsa bar, but our guacamole salsa is by far one of the best things available at Backyard Taco. Guacamole is another item that has been around since ancient times as well. The Aztecs considered mashed avocado a delicacy, calling it ahuacamole, which means “avocado sauce.” When the Spanish came and invaded, they adopted the dish, adding in other spices and lime juice to it, and changed the name to guacamole.
There are many variations to guacamole, but in our Backyard Taco kitchen, we like to keep it simple, fresh, and equally delicious. Our guacamole salsa is simply a mix of LOTS of avocados, a few spices, and a mixture of ice and water before being blended together and kept chilled, ready and waiting for all of our guests at the salsa bar. No matter what you’re eating, even if it’s our simple but famous bean and cheese burrito, our guacamole will be the perfect pairing. Don’t forget, if the heat from one of our salsas is getting to you, guacamole is a good way to cool down those heat receptors in your tongue.

We’ve got more than just amazing sauces at our delicious salsa bar. For the most inclusive experience, we have a variety of offerings. Starting off with limes, cut to the perfect size for squeezing on top of any and all of our Backyard Taco offerings, well, because lime juice is the chef’s kiss if we do say so ourselves. Next up, we have freshly sliced cucumbers and radishes. Whether you munch on them as a side or add them into your Bueno Bowl for some extra health, they are cool and crisp and refreshing, no matter what you’re eating while dining at Backyard Taco.
Last, but certainly not least, beyond the chopped onions we top all of our carne al carbon with, we have our pickled red onions, which can also be both the perfect topping or bite between eating our quesadillas, tostadas, and more. They offer a little tang and just the right amount of crunch, and did you know that pickled onions are good for gut health?
